In 2005 we started to acquire a couple of Galloway cattle and the combination of having some very frugal cattle combined with their beautiful charisma were just some of the reasons why we chose this particular breed. The herd quickly grew larger and we entered into cooperation with the state on the care of special nature-sensitive areas, e.g. around the Vejle river valley.
It turned out that the Galloway cattle managed to be gentle on the areas, while at the same time being able to feed themselves. The result was that the meat got a fantastic taste of wild herbs and the fat marbling got into the meat, as they use their entire musculature, in their daily walk around the hills.
